Tuesday, January 24, 2012

THE word 'alfredo' just sounds nice, doesn't it? But, what is it? It's this tasty and creamy sauce, which is usually served with pasta and chicken.

Chicken Alfredo with Fettuccine Pasta is a divine combination that it is guaranteed to make your mouth water. The pictures below will make you want to run to the nearest supermarket, search your cupboards and even borrow some ingredients from a neighbour, just so you can make the dish.

INGREDIENTS

For the pasta:

1 lb fettuccine pasta

3 quart water

1 tsp salt

1 tbsp vegetable oil

For the Alfredo Sauce:

4 oz butter

8 fl oz heavy cream

12 oz grated Parmesan cheese

2 oz garlic (finely crushed)

1/4 tsp salt

1/4 tbsp black pepper

1 lb chicken breast

Herbs of your choice, chopped parsley is classic

METHOD

1 Put the water into a large pot. Add the salt and oil and bring the water to a boil. Add the fettuccine and let it boil for about 10 minutes or until cooked al dente. When the fettuccine pasta is ready, drain it, cool it down with ice water, drain, oil and set aside in a bowl.

2 In a sauce pot, heat the heavy cream over a low flame then add butter and mix well. After the butter is melted, add garlic and adjust seasoning with salt and pepper

3 Add grated Parmesan cheese and stir well until the cheese has melted completely.

4 In a sauté pot add vegetable oil and sauce chicken strips, season with salt and pepper.

5 When chicken is just about cooked add the pasta and the Alfredo sauce. Toss until all the ingredients are fully coated with the sauce. Garnish with chopped parsley.

NB: Do not attempt without parental supervision.
