Making Chocolate Chip COOKIES with Jiggy and Mummy

AT age 17 in 2001, she was crowned the youngest Miss Jamaica World. She is now one the hosts for the morning show CVM at Sunrise on CVM TV and has also been acting in plays and a television series. It is the elegant Regina Beavers.

TEENage found out that this year she chose her son — Giomar — to be her Valentine. Her son, who she affectionately calls 'Jiggy', is the love of her life and just the mention of his name brings bright blushes and huge grins to her face.

Regina knows how much her son and valentine loves sweets and so she decided that she would present him with his favourite — Chocolate Chip Cookies.

These cookies will really satisfy the craving of your sweet tooth with their crunch in each bite. The cookies can also be accompanied by a scoop of vanilla ice cream in which you could dip that wonderful tasting cookie and take a heavenly bite and that will result in a mind-blowing attack on your senses with a mixture of the cold ice cream and the hot cookies — if you eat them right away.

It definitely makes you say WOW then you would take another bite.

Ingredients

8 oz unsalted butter

8 oz granulated sugar

8 oz brown sugar

2 eggs

2 tsp vanilla extract

1 1/2 lb all-purpose flour

1 tsp baking soda

1/2 tsp salt

2 tsp hot water

1 lb semi-sweet chocolate chips

Garnish

3 cherries, maraschino

8 oz vanilla ice cream

6 oz whole almonds (chopped)

Procedure

1 Sift together the flour, baking soda, and salt and set aside.

2 Place the butter, granulated sugar, and brown sugar in an electric mixer, using the paddle attachment on medium speed, cream together until light and smooth.

3 Add the eggs slowly, fully incorporating and scraping down the sides of the bowl after each addition. Add the hot water and the salt.

4 Add the dry ingredients and blend just to combine, scraping down the sides of the bowl as necessary. Blend in the chocolate chips.

5 Scale into 2 1/2 oz or 75g portions and drop unto parchment lined sheet trays.

6 Bake in a 350ºF/175ºC oven until the edges of the cookies are lightly brown, eight to 10 minutes.

7 Remove the tray from the oven and allow the cookies to cool.

8 Serve with vanilla ice cream and chopped almonds.
