The BEST DRESSED Free Range
FOODIE NEWS
Thursday, December 15, 2011
Jamaica Broilers Group served Best Dressed Free Range chicken Tuesday last in a variety of ways at the company's head office in McCook's Pen, St Catherine.
Speaking to guests at the launch, vice-president of Best Dressed Chicken Operations, David Mair, noted that the company is "continuously pioneering new and exciting products and the Free Range chicken is just the latest addition to the line of products." Mair also went on to state that Jamaica Broilers is now the first poultry company outside of the United States and Canada that have been certified by the Global Animal Partnership — a non-profit organisation that is geared towards improving the lives of farm animals raised for meat.
Mair later shared with Thursday Food that there has been an increasing demand from customers for the Free-Range chicken and Jamaica Broilers are simply responding to that demand. "People are requesting it because it is another option. A great option, and since we have sent it out to particular customers the feedback has been tremendously good," Mair continued.
Thursday Food also spoke with Dr Fred Hanley, technical and R&D manager at Best Dressed Chicken, who is responsible for implementing the project, as well as finding the farmers and the farms along with overseeing the growth of the birds. Hanley explained: "The difference between the original poultry that are raised in tunnel houses and the Free Range poultry lies in the texture of the chicken. One will find that the Free Range chicken is more lean because of all the outdoor activities." Hanley even divulged to Thursday Food that the Free Range chicken may even be healthier because of its outdoor growth. He continued by saying that the length of time in the growing process is also significant. "Whereas the usual bird would take approximately 38 to 40 days to be processed, the Free Range bird would have a longer process time of approximately 43-50 days."
Guests at the launch were later feted with delectable Free Range chicken meals prepared by caterer Jacqui Tyson and her From Thought To Finish team. Tyson included the Best Dressed Free Range chicken in three of the five courses on the day's menu.
