Chef/patron of Miss T's Kitchen in Ocho Rios Anna-Kay Tomlinson is back in her own kitchen having just returned from Florida, USA where she was guest chef at Ortanique on the Mile in Coral Gables. Always striving to improve her culinary skills and by extension the experience of her patrons, Tomlinson exchanged ideas with Cindy Hutson and Delius Shirley as she wowed the couple's Coral Gable clientele with her signature Jamaican dishes especially her oxtail and beans. Thursday Food looks forward to popping over to Ochi and sharing new and tasty innovations from Miss T's.
Ortanique on the Mile is a family-owned Caribbean fine-dining restaurant, which has been in operation for a little over 12 years, located on Miracle Mile in the heart of the historic Coral Gables, Florida. The concept started with a little hole-in-the wall on Lincoln Road in South Beach called Norma's on the Beach, which was the brainchild of restaurateurs Delius Shirley (son of the late celebrated culinary doyenne Norma Shirley) and co-owner Cindy Hutson. After five years Norma's on the Beach caught the eye of some financial backers and the Ortanique chapter was born. After the success of their Coral Gables location, Cindy and Delius were romanced to expand their unique concept to Las Vegas, Washington DC, Baltimore and Destin, Florida.
The couple has recently teamed up with Dart Enterprises in Dart's residential and retail town centre called Camana Bay in Grand Cayman, Cayman Islands. The restaurant has since last November offered full moon Caja China pig roasts with salsa dancing and their famous Bacardi Mojitos, also a Caribbean-inspired brunch that donates to the Humane Society. Hutson's cuisine is electric and multicultural encompassing Caribbean, South American, European, Indian and Pan-Asian cuisines. Hutson has been dubbed the "Cuisine of the Sun" chef.
